Roasted at the cusp of second crack. We decided to take the Guatemalan we have been using in espresso for a few months and bring it to the next level in the Jubilee. This really brings out the dark fruit flavors like cherry or plum juice. Cacao nibs, brown sugar fragrance. Slightly fermented sweetness and a wonderfull aftertaste.
